Easy Veggie Pasta Sauce
This pasta sauce is super easy and interchangeable with whatever vegetables you have on hand. Its great for getting rid of those veggies that need using up or simply adding more veggies to your food, especially when you have kids. I love this idea as you can make a huge batch and preserve for a later date in the freezer on can it and put on the shelf. Its a great way to add more veggies and hide them so you don't even know they are there. Season it however you like, just use this as the base and you can add extras later on. This is what I put in this recipe, but feel free to add whatever vegetables you have on hand. This will make a big pots worth, about 4 jars of sauce, so be sure to grab a big pot to cook it in. You can add this to pastas, bolognese, lasagne, mexican sauces, and more, the possibilities are endless.

Ingredients:

2-3x Capsicums (sweet peppers)

1x Zucchini
-
4x Celery stalks
-
4-5x Carrots
-
1x Onion
-
4-8x Garlic (however much you like)

3-6x Tomato's

Other veggies that you can use, which I have used before: potato's, sweet potato, pumpkin, eggplant, squash, etc, any veggies work, so get creative.​

1-2Tblsp Oil
-
2 cups Broth
-
Salt and pepper to season

Optional extras: herbs (fresh or dried), spices, worcestershire, canned tomatoes, red wine, balsamic vinegar

Directions:

Chop all veggies, rough chop just to cook them as they will be pureed in the end, so size doesn't matter.

Heat oil in a large pot on the stove on a med-high heat

Add the onion and garlic first and cook for 3-5mins

Then you can start adding in the rest of the veggies one at a time and stir thoroughly

Once all veggies are in the pot, add your seasonings and continue to stir often for about 5mins

Add broth and simmer for about 1-3hrs

Once all veggies are soft, remove from the heat and puree with a stick blender until it reaches you desired consistancy

Taste test to see if you want to add any of the optional extras for flavour or leave as is

Divide into portion sizes for your family, the more veggies you put on your pot the more you will make. You can either store in the freezer or can and put on the shelf

When it comes to preparing your sauce in your favourite dish, ensure to defrost (if frozen) or simply open the can. Add this to meat or pasta for a quick meal.
